Asparagus Artichoke Salad

These two in-season vegetables make the perfect combination for this salad. This recipe from Simple Recipes has asparagus and artichokes with a smattering of shallots, cherry tomatoes, garlic powder, and a sprinkle of vinaigrette. The asparagus is grilled to give it a smoky flavor while the marinated artichoke hearts add zest to the salad. To stay true to its natural flavor, the asparagus should not be overcooked and the rest of the ingredients should all be fresh.

Pasta Primavera

This dish has carrots, tomatoes, garlic, mushrooms, and asparagus boiled in broth then tossed in fettuccini pasta. Incidentally, primavera is the Spanish word for “spring,” making this vegetable-laden pasta dish a good match for the season.

Marinated Chicken Bruschetta

This dish from BJ’s Solutions is the perfect companion to your pasta primavera! Marinate the chicken fillet halves in Italian dressing then let it set. While marinating, combine the rest of the ingredients in a separate bowl then marinate as well. You can grill or broil the chicken until tender, add in the vegetables afterwards, and serve.

Taking about an hour to prepare and cook, this dish can be your main entrée for the night.
